Paleo Diet Recipes
This is a great recipe and very tasty food. The Chicken Tortilla Soup is definitely a favorite of mine. Great meal for your Paleo Diet.
Ingredients
- 1 onion, diced
- 1 green pepper, seeded and diced
- 1 (or 2) jalapenos, seeded and diced
- 2 cloves of garlic, minced
- 1 tbsp coconut oil (virgin, unrefined)
- 2 skinless, boneless chicken breasts, cut roughly into thirds
- 32-ounces low sodium chicken broth (organic if possible)
- 1 tbsp chili powder
- 1 tsp cumin
- 1/2 tsp Mexican oregano
- 1 tbsp tomato paste (see note under Tips & Tricks)
- 2 cups of fresh diced and seeded tomatoes (plum tomatoes work great), or 1 28-ounce can of diced tomatoes if fresh aren’t available
- Salt and pepper
- 1 lime
- 1/4 cup chopped cilantro
- 1 avocado, diced
